Blueberry Cheesecake Bites
8 low-fat Honey Graham Crackers
I Can’t Believe It’s Not Butter spray
1  8-oz package fat-free cream cheese
¼ cup Splenda
¼ cup egg whites
1 tsp lemon zest
1 tsp vanilla extract
1 can sweetened condensed milk
1 Tbsp whole wheat flour
¼ cup All Fruit blueberry jam
1 cup fresh blueberries

With oven rack in the center of oven, preheat the oven to 375 degrees.  Line
24 muffin cups with paper liners then spray with butter spray.   Place Graham
Crackers in food processor and crumble.  Mix a small amount of butter with
crumbs until slightly moistened.  Place a thin layer of crumbs along bottom of
muffin liner.  With an electric mixer on high speed, beat the cream cheese,
Splenda, egg whites, lemon zest, sweetened condensed milk, flour, and
vanilla in a medium bowl until light and fluffy.  Spoon a level tablespoon of the
mixture into each muffin cup.  Bake until puffed and set in the center (about 9
minutes).  Cool in pans on rack.  Place the jam in a medium bowl in the
microwave and heat on high, just until the jam begins to bubble (about 15
seconds).  Gently stir in the blueberries until evenly coated with jam.  Spoon
the berries over the cheesecakes and refrigerate until ready to serve.

Serving size = 2 bites = 110 calories
Yield:  12 servings

Chocolate-Orange Torte
1 2 1/4-ounce package slivered almonds (1/2 cup); 4 oranges; 1
20-ounce package double-chocolate muffin mix; 1 cup sugar Heat oven
to 375° F. Lightly coat a 9-inch round cake pan with vegetable cooking
spray.Finely chop the almonds. Grate 1 teaspoon orange zest from one
of the oranges and cut strips of zest from another to use for garnish.
Squeeze 1 1/2 cups juice from the oranges.   Prepare the muffin mix
according to the label directions but substitute 3/4 cup of the orange
juice for water and blend in the chopped almonds and grated zest. Pour
into pan. Bake 25 minutes or until a toothpick inserted in the center
comes out clean. Cool torte in pan on a wire rack for 10 minutes.
Remove from pan.   Meanwhile, in a small saucepan, combine the sugar
and the remaining 3/4 cup orange juice. Simmer, stirring occasionally,
until slightly reduced and thickened, about 10 minutes. To serve, spoon
the sauce over the torte and garnish with the orange-zest strips. Yield: 8

EASY COCONUT MACAROONS
1 14oz bag of Bakers Secret Coconut 1 Can
Eagle Brand Condensed Milk 2 tsp Vanilla
Combine the ingredients in a large bowl.
Drop by teaspoon on a well greased cookie
sheet. Bake 10-12 minutes or until golden
brown in a 350 degree oven.  Remove
promptly from cookie sheet and cool on wire
rack.

3/4 cup cocoa powder
3/4 cup butter
2 cups sugar
4 eggs
1-1/4 cups flour
1 tsp. baking powder
1-1/2 cups powdered sugar
3/4 cup peanut butter
8 oz. pkg. cream cheese, softened
1/2 cup peanut butter
1/2 cup powdered sugar
6 serving size pkg. instant vanilla pudding mix
2-1/2 cups milk
8 oz. frozen whipped topping, thawed

NOTE: To make this a totally no cook recipe, use brownies purchased
from a bakery/grocery store.

PREHEAT oven to 350 degrees F.  spray 13x9” pan with baking spray
and set aside.        In large microwave safe bowl, melt butter with cocoa;
stir until smooth. Add sugar & mix thoroughly. Beat in eggs until smooth.
Add flour & baking powder & mix just until blended. Pour into prepared
pan & bake at 350 degrees F for 20-23 minutes until barely set. Cool
completely on wire rack.
In small bowl combine 1-1/2 cups powdered sugar & 3/4 cup peanut
butter until crumbly & all powdered sugar has been incorporated into
peanut butter. Set aside.
In medium bowl, combine cream cheese, 1/2 cup peanut butter & 1/2 cup
powdered sugar & beat until fluffy. In another bowl, combine pudding mix
& milk & beat with wire whisk for 2 minutes. Gradually add to cream
cheese mixture, beating until smooth,  stir in thawed whipped topping.   
Fold 3/4 of the peanut butter/powdered sugar crumbles into the cream
cheese mixture & spread over cooled brownies. Top with remaining
peanut butter crumbles. Freeze until solid, at least 3 hours.  Remove
from freezer 20 minutes before serving time for easier cutting.
FROZEN PEANUT CHOCOLATE PARFAIT BARS
covered with a cream cheese peanut butter pudding mixture studded
with peanut butter crumbles, then the whole thing is frozen.  Prep Time:
20 minutes - Cook Time: 25 minutes - Serves 16-20
LAST MINUTE LASAGNE ( realsimple.com)

Ingredients
•        1 26-ounce jar pasta sauce
•        2 30-ounce bags frozen large cheese ravioli, unthawed
•        1 10-ounce box frozen chopped spinach, thawed and squeezed of
excess water
•        1 8-ounce bag shredded mozzarella
•        1/2 cup grated Parmesan
Directions
1  Heat oven to 350° F. Coat a 13-by-9-inch baking dish with cooking
spray and spoon in a third of the sauce.
2  Arrange 12 ravioli on top and scatter the spinach over them. Top with
half of each cheese. Cover with another layer of ravioli and the remaining
sauce and cheese.
3  Cover with foil and bake 25 minutes. Uncover and bake 5 to 10
minutes more or until bubbly.

DIRECTIONS
(1)Put wheat flakes and peanuts in zip-lock bag
and gently roll with
rolling pin to just slightly reduce the size of the
mixture.

(2) Melt caramels and skim milk (saucepan over
low heat stirring constantly
or microwave 1 minute or just long enough to
melt - watch and don’t leave the room!)

(3) When caramels are smooth, slowly sift in the
flakes & nuts (smile).
Mix thoroughly until mix is completely wet.

(4) USING WET HANDS, spread the mixture in
an ungreased 7x11 inch pan,
press into an even layer.  Allow to cool for 20
minutes in refrigerator and then cut into 15 bars.

NOTE:  One bar and 8 oz skim milk makes a
great healthy, once-a-day snack.  
With all that fiber, I recommend you really
don’t eat more than one a day
!

3/4 cup unsalted dry roasted peanuts.
6 oz About 22 caramels (cut in half) (Kraft)
2 tablespoons of skim milk (Yes, measure it!)
